Welcome.
I’m Christian F. B. Puglisi — former Michelin-starred chef, restaurateur, organic farmer, father, and author. After more than two decades in kitchens like El Bulli and Noma, and after founding restaurants such as Relæ, Bæst, Manfreds, Mirabelle, and Farm of Ideas, I stepped away from the intense rhythm of the restaurant world.
I did it to slow down, to be with my family, and to reflect — not just on cooking, but on the kind of life I want to build from here.
This space is part of that process.
Over the coming months, I’ll be sharing thoughts, essays, and recipes — drawn from years of building kitchens, leading teams, failing forward, and trying to live with some kind of honesty and intention. I’ll also be sharing what I’ve learned about home cooking, sustainability, sourcing ingredients, and keeping your mind focused in an industry full of myths and distractions.
But this isn’t just about food.
It’s about identity, fatherhood, masculinity, and what it means to live well — especially as a man in midlife, balancing ambition with presence, pressure with perspective.
If any of that speaks to you — whether you’re a chef, a home cook, or someone rethinking your own path — I hope you’ll subscribe and follow along. I’m working on a new book, and this newsletter will be a place to share the journey as it unfolds.
Thanks for being here.
— Christian
Welcome, friend!
What happens after you walk away from the kitchen? From the intensity, the pressure, the identity? I’ve lived it — as a chef, father, and writer — and this space is where I share what I’ve learned, and what I’m still figuring out.
