  • 1982 – Born in Messina, Italy
  • 1990 – Moved to Denmark
  • 2002 – Graduated from Danish Hospitality College
  • 2005–2006 – Stages at Le Taillevent (Paris) and El Bulli (Spain)
  • 2006 wrote a series of essays on the life of a stagiare in El Bulli, for Politiken, a Danish news paper
  • 2007–2009 – Sous-chef at Noma
  • 2010 – Opened Relæ and Manfreds
  • 2011 – Relæ awarded Bib Gourmand
  • 2012 – Relæ was awarded a Michelin star, which it kept until its closure.
  • 2013 – Relæ obtained Danish organic certification, making it the first Michelin-starred restaurant with such certification
  • 2014 – Opened Bæst and Mirabelle
  • 2014 – Published Relæ: A Book of Ideas
  • 2015 – Relæ ranked #45 on 50 Best Restaurants; Bæst named Bistro of the Year
  • 2016 – Founded Farm of Ideas
  • 2017 & 2019 – Organised Seed Exchange festival
  • 2020 – Closed Relæ, Manfreds, and Farm of Ideas to focus on Bæst & Mirabelle
  • 2023 – Mirabelle transformed into a Sicilian restaurant
  • 2025 – sold all shares of Bæst and Mirabelle to focus on writing, home cooking and family life.
  • Currently - enjoying leave with my children, slowly working on a book.
